#1 Easter Treats

Who doesn’t love a hot cross bun? And who doesn’t love bread and butter pud? Both are delicious, heart-warming recipes that look and taste amazing. So, now imagine a beautifully sweet combination of the two.

A bread and butter bun?
A hot cross pudding?

How about a hot cross bun bread and butter pudding! Delicious.

This is such a yummy twist on a classic pud, perfect for Easter Sunday, or to use up any leftover buns (unlikely but you never know) so we wanted to share our favourite recipe with you.

Of course, this recipe comes from our very own Granny Satchell, a lady of many talents and renowned for her baking skills!

Here’s her four-step method to create some tasty Easter loveliness.

Ingredients

  • 200ml double cream 
  • 400ml whole milk 
  • 3 eggs
  • 75g caster sugar
  • 1tsp vanilla extract
  • 2tbsp Cointreau (cheeky!)
  • Zest of 1 orange
  • 50g butter
  • 8 hot cross buns (halved)
  • 4tbsp shredless marmalade
  • Single cream to serve

Method

STEP 1 Pour the cream and milk into a pan and heat gently to just below simmering point. Whisk the eggs and sugar together in a large bowl. Gradually whisk in the hot milk and cream, then stir in the vanilla extract, Cointreau and the orange zest. This makes a custard.

STEP 2 Butter the hot cross buns and spread with a generous dollop of marmalade, then sandwich them back together and cut all but one in half so you have 14 semi-circles in total, plus 1 whole one.

STEP 3 Place the whole bun in the centre of a 26cm round baking dish and arrange the half buns around it. Pour over the custard. Leave it to soak for 15 minutes. Heat the oven to 160C/fan 140C/gas mark 3 and put a heavy baking tray into the oven.

STEP 4 Gently press the buns down into the custard before putting the dish onto the hot baking tray. Bake for 35-40 minutes or until the custard is just set. Brush with more marmalade and leave in the dish for 10 minutes before spooning out.

Serve with lashings of cream.
